A recipe for pumpkin pie that is deliciously rich and creamy. Who could resist? Certainly not us!

1 15-ounce can pure pumpkin
12 ounces silken tofu
1/2 cup maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon salt

1 (9-inch) unbaked pie crust of your choice. Click on this link for a delicious gluten-free pie crust recipe.

Preheat the oven to 350°

Combine all the above ingredients in a blender or food processor until completely smooth. Pour into the pie crust and bake for 1 hour or until set.

Set aside to cool.

Top with vegan whipped cream and enjoy!
