Quick and Easy Vegetable Soup is the perfect recipe for cleaning out the fridge and even the freezer! It's a great way to use up all those veggies that might not otherwise survive the week.

Now, let's get chopping so you can make this into your quick and easy vegetable soup.

32-ounces of prepared Better Than Boullion Vegetable Broth
1 cup carrots, diced
1 cup Brussels sprouts, some halved
1 medium potato, diced
1/2 cup onion, chopped
1/2 cup celery, diced
1 cup cauliflower, diced
2 cloves garlic, minced
1/2 cup cabbage, chopped
salt and freshly ground black pepper to taste

Add the vegetable broth to a large pot over medium heat.

Add the carrots, brussels sprouts, potato, onion, celery, cauliflower, and garlic to the pot and bring to a boil.

Reduce the heat and simmer for ten minutes, stirring occasionally.

Toss in the cabbage and simmer for an additional 10 minutes, or until the vegetables are tender.

Season with salt and pepper to taste.

Garnish with any fresh herbs you might have on hand, such as basil, parsley, or cilantro.
