Grilled cheese sandwiches are the best kind of comfort food. And lucky for us, there are several kinds of vegan cheese on the market. You can even make your own! So grab your favorite bread and your favorite vegan cheese, and let's get grilling!

2 slices of bread (one of our favorites; Dave's Killer Bread)
1 thick-cut slice of cheese, approximately 1/2-inch thick
(We used Field Roast Chao Slices - Creamy Original)
1 - 2 tablespoons vegan butter (our favorite; Earth Balance)

Preheat your Skillet (preferably cast iron) over medium heat. Meanwhile spread the butter on one side of each slice of bread.

Place the first slice, butter side down, into the skillet and top with cheese. Now place the other slice of bread over the cheese, butter side up.

Grill for approximately 2 to 3 minutes per side, or until the bread is golden brown and the cheese has melted.

That's it! One perfectly grilled - grilled cheese sandwich!
