Oregano Pesto

We had never heard of oregano pesto before our friend Jennifer shared her recipe with us, and as oregano lovers, we're super excited about it!

Here's what you need:

2 cups fresh oregano leaves, lightly packed
1/2 cup olive oil
1/8 cup raw plain pumpkin seeds
1/8 cup raw plain sunflower seeds
2 medium cloves of garlic, peeled
Juice of about 1/8 of a lime
1/4 cup nutritional yeast
1/2 tsp salt (or to taste)
black pepper to taste

Avocado Mayo

This avocado mayo will change the way you look at your next sandwich! It's rich and creamy and full of flavor.

One of our favorite ways to enjoy this delicious mayo is on toast, topped with a tofu scramble or JUST egg. It's beyond delicious!

Here's what you need:

Two avocados, ripe
2/3 cup vegetable or sunflower oil
1/4 cup of chickpea water (aquafaba)
Juice of 1/2 lime
1 teaspoon Dijon or yellow mustard
a pinch of salt and pepper

JUST Egg Vegan Quiche

When I first learned that a company named JUST Egg had created a liquid "egg" that you could scramble like real eggs, it felt a little like hitting the jackpot. But making scrambled "eggs" was just the beginning.

Using this product to make various delicious recipes, including quiche, is easy and convenient.

There are many variables to making a quiche and many ingredients one could use. We're JUST getting started!

Here is what you need:

One 9-inch pie crust, fresh or frozen, homemade or store-bought

Vegan Bechamel

Béchamel is a fancy name for White Sauce. And I must admit, it sounds a little more appealing, especially if you say it with a French accent.

This sauce is delicious but can also be the base for a delicious savory gravy or cheese sauce.

Here's how you make it:

3 tablespoons butter (we like Miyoko's, but any will do)
3 tablespoons AP flour
1 2/3 warm non-dairy milk
salt
freshly ground white or black pepper

Asian Tofu Marinade

There are many marinades for tofu, but this Asian Tofu Marinade is deliciously sweet, zesty, and easily one of my favorites. It could just be your tofu's new BFF!

Here's what you need:

1 to a 1-1/2-inch knob of fresh ginger, skinned and minced or grated
2 large cloves of garlic, minced or grated
2 tablespoons maple syrup
1/4 cup soy sauce, tamari, or coconut liquid aminos
1 tablespoon toasted sesame oil
1 tablespoon extra virgin olive oil
1 tablespoon sriracha
1/4 to 1 teaspoon hot Chinese mustard, to taste

The Perfect Vegan Sushi Rice

By nature, sushi rice is vegan - and it's delicious! Sushi rice, also called "sticky" rice, is a must when making vegetable or "veggie" sushi.

We used short-grain Calrose rice for this recipe. But you can use any rice of your choosing. Some even prefer to use brown rice - and that's fine too!

Here's what you need:

2 cups rice
2 cups cold water (more for washing the rice)

1/2 cup rice vinegar
4 tablespoon turbinado sugar
1/2 teaspoon salt
