Quinoa Stuffed Winter Squash

This recipe has a couple of steps, but luckily, each step is easy, and the outcome is unbelievably delicious.

Here's what you'll need:

3 cups prepared quinoa

Two winter squash, halved
olive oil
salt and pepper

1 cup of mushrooms, white or baby Bella, finely chopped
1/2 yellow onion, small dice
2 large cloves of garlic, minced or crushed
1/2 cup of chopped walnuts (optional)
parsley for garnish (optional)

Preheat the oven to 400° F

Sweet Italian Salad Dressing

The ever-popular Texas Roadhouse restaurant has a housemade Sweet Italian Dressing that they are known for, but unfortunately, it isn't vegan.

However, we managed to get our hands on the recipe (they published it in a local news article, so it wasn't difficult).

This "veganized" version is delicious! Now, we understand what all the fuss is about!

Warning: This dressing will increase your appetite for salad.

Here's what you need:

Add the following to a medium-sized mixing bowl and mix thoroughly.

Vegetable Stuffed Pita Sandwich

Pita bread is this light and yummy vehicle that you can stuff with all of your favorite foods. For this one, we've kept things fresh and deliciously simple. However, you can get creative by adding different plant-based meats, cheeses, or spiced hummus!

Here's how we made this summertime lunch favorite:

2 pieces of pita bread, halved
3 medium vine-ripe tomatoes, sliced
1/2 purple onion, thinly sliced
1 English cucumber, thinly sliced
Several green leaf lettuce leaves
a handful of basil, cilantro, dill, and clover leaves (optional)

Taco Burger

A Taco Burger gives you the best of both worlds! It has all the flavor of a taco, but it's deliciously served on a bun!

1 tablespoon olive oil
1 lb. plant-based crumble, fresh or frozen
1/4 cup onion, diced
1/2 cup sweet red and green bell pepper, combined, seeded, and diced
2 tablespoons Taco Seasoning
1/4 cup water

Vanilla Cupcakes

Vanilla cupcakes are so versatile and easy to make. Valentine's Day, Mother's Day, 4th of July, or just because! Frost and decorate them however you like, and you'll have a dessert everyone will love!

1 3/4 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup non-dairy milk
1/2 cup vegetable oil
1 tablespoon apple cider vinegar
2 teaspoons pure vanilla extract

Preheat the oven to 350°

Homemade Taco Seasoning

This homemade taco seasoning is super easy to make and is made with ingredients you most likely already have on hand.

Yum! It's the perfect blend of spices for tacos, fajitas, taco burgers, or anywhere you would like to add a bit of southwestern spice. Think Mac and Cheese, or vegetable and fry dips.

1 tablespoon chili powder.
1/4 teaspoon garlic powder.
1/4 teaspoon onion powder.
1/4 teaspoon crushed red pepper flakes.
1/4 teaspoon dried oregano.
1/2 teaspoon smoked paprika.
1 teaspoon ground cumin.
1 teaspoon sea salt.
