Hearts of palm are low in calories and high in nutrients. In addition, their subtle earthy flavor makes them perfect for combining with other ingredients and turning them into the best recipes, like this hearts of palm salad, for starters.
This is one of my favorite ways to enjoy the hearts of palm.
1 - 14 oz. can of Heart of Palm, drained and chopped
3 tablespoons vegan mayo
1 teaspoon Dijon mustard
1 teaspoon capers, chopped
1 stalk of celery, chopped
2 scallions, green parts only
pinch of salt and freshly ground black pepper
Combine all of the ingredients in a large bowl, then chill. Grab two slices of your favorite style of bread, and add 1/4 to 1/2 cup of this delicious salad. Top it off with a mound of greens, and you've got yourself the perfect meal.
You can also enjoy this with your favorite mix of greens, topped with a tablespoon or two of sunflower seeds, for a salad you'll love!
